Alteration work from people who found you, not a shop

Alterations usually go to whichever shop is nearest, at whatever that shop charges. Tasks here come from somebody who has decided what they need doing and said what they will pay, which means you are pricing the garment rather than matching a high-street rate.

What the tasks actually look like

Hems and taking in, zip replacements, suit adjustments before something specific, wedding-dress work where the date is the whole constraint. Most are drop-off and collect. Posters usually say the deadline, which matters more than the garment.

Do people come to me?

Usually. Say in your offer whether you fit at your place, and whether you need a second fitting, because that changes the timeline for both of you.

How do I price a garment I have not seen?

Offer on what the task describes and say the price assumes it. Bridal especially is worth seeing before you commit to a number.

What about a deadline I cannot meet?

Do not offer on it. A late alteration for an event is worse than no alteration, and the date is usually the reason the task exists.
